  • 2 Lbs Chicken Breast, Pulled
  • ½ cup Macadamia Nuts, Toasted
  • 1 cup Mayonnaise
  • ¾ Tbsp Dijon Mustard
  • 2 Stalk Celery, Diced
  • ½ cup Pineapple, Tidbits
  • 2 Tbsp Sweetened Coconut, Toasted
  • 1 Lime, Juiced
  • Salt and Pepper, to Taste

Toast coconut flakes and macadamia nuts and place to the side. Slice and dice the celery, green onion, pineapples, and cilantro. Add those ingredients to a mixing bowl along with the Chicken Breast, mayonnaise, Dijon mustard, and lime juice. Season with salt and pepper. Mix everything together until it’s well combined. Let it chill in the fridge until you’re ready to serve.
