  • ½ Lb Beef Fajita Strips, Diced
  • 1 Cup Canola Oil
  • 4 Corn Tortillas
  • 1 Cup Refried Beans
  • 4 Eggs, Fried
  • Cilantro, to Garnish
  • Queso Fresco, to Garnish
  • Avocado, to Garnish
  • 1 Cup Ranchero Salsa, See Recipe

Rancho Salsa

  • 2 Roma Tomatoes, Diced
  • ¼ White Onion, Sliced
  • 1 Jalapeño, Sliced
  • 1 Clove Garlic, Minced
  • 3 Tbsp Water
  • 1 tsp Cumin
  • 2 tsp Salt

In a small pan, heat 1 tablespoon of canola oil over medium high heat. Sauté garlic, jalapeños, and onion until slightly soft. Fold in tomatoes, water, cumin, and salt and cook until the tomatoes start to break down. Remove from heat and set aside. In a small pan, heat 2 tablespoons of canola oil and add in refried beans and simmer. Heat the beef according to package directions. While beans are simmering, heat oil in a shallow pan and fry the tortillas. Place 2 tortillas on a plate, cover the tortillas with refried beans and top with beef, the fried eggs, ranchero salsa, cilantro, queso fresco, and avocado.
