  • 1 Lb Sweet BBQ Breaded Chicken Tenders
  • 4 Cups Romaine Lettuce, Chopped
  • 1 can Black Beans, Drained and Rinsed
  • 1 Cup Corn, Drained and Rinsed
  • 2 Tbsp Mayo
  • 1 Tbsp Cilantro, Chopped
  • 2 Tbsp Cotija
  • 1 Cup Cherry Tomatoes, cut in half
  • ¼ Cup Red Onion, diced
  • ¼ Cup Avocado, diced
  • Tortilla Strips, to garnish

Cilantro Lime Ranch Dressing

  • 1 Cup Cilantro
  • 1 Cup Mayo
  • ½ Cup Sour Cream
  • 2 Limes, Juiced
  • 2 Tbsp Ranch Seasoning
  • 1 Jalapeño
  • 1 tsp Garlic

In a blender, add the cilantro, lime juice, ranch seasoning, jalapeño, garlic, mayo, buttermilk, salt and pepper; set aside. In a small bowl, mix the corn, mayo, cilantro and cotija and set aside. Heat the chicken according to package directions and cut into strips. In a large bowl, add romaine and top with chicken, black beans, corn, tomatoes, red onion, avocado, tortillas strips and drizzle with cilantro lime ranch dressing.
