Ingredients:
Preheat the oven to 425°, and toss the sweet potatoes with oil, paprika, salt and pepper. Roast potatoes in oven for about 20-25 minutes or until browned and soft in the middle. In a large nonstick skillet, heat canola oil over medium heat and sauté’ bell peppers. Once peppers start to soften, add in the diced beef, black beans, onions, and spices and cook for an additional 5 minutes. Plate the sweet potatoes, vegetables, meat, and garnish with fried eggs, sliced jalapeño, and cilantro.
